Ingredients:
- 1 lb (450g) ground beef or pork (or a mix)
- 6 medium potatoes (peeled and thinly sliced)
- 1 onion (chopped)
- 2 garlic cloves (minced)
- 1 cup shredded cheese (cheddar, mozzarella, or a mix)
- 1 cup milk or cream
- 2 eggs
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp dried oregano or thyme
- Salt and pepper to taste
- Fresh parsley (chopped, for garnish)
Instructions:
1. Preheat Oven:
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
2. Cook the Minced Meat:
- Heat 2 tbsp of olive oil in a skillet over medium heat.
- Add the chopped onion and garlic and sauté for about 3-4 minutes until softened.
- Add the ground meat, breaking it up with a spoon, and cook until browned and fully cooked, about 7-8 minutes.
- Season with salt, pepper, paprika, and oregano. Remove from heat and set aside.
3. Prepare the Potatoes:
- Peel and thinly slice the potatoes (you can use a mandoline for even slices). Season them lightly with salt and pepper.
4. Assemble the Casserole:
- In the greased baking dish, layer half of the sliced potatoes at the bottom.
- Spread the cooked minced meat mixture evenly over the potatoes.
- Add the remaining sliced potatoes on top of the meat layer.
5. Make the Egg and Cheese Mixture:
- In a bowl, whisk together the eggs and milk or cream.
- Stir in half of the shredded cheese and season with a pinch of salt and pepper.
- Pour this mixture evenly over the casserole.
6. Bake the Casserole:
- Cover the dish with aluminum foil and bake for 35-40 minutes, until the potatoes are tender.
- Remove the foil, sprinkle the remaining cheese on top, and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and golden brown.
7. Serve:
- Let the casserole rest for a few minutes before slicing.
- Garnish with chopped parsley and serve hot with a simple salad or steamed vegetables.
Enjoy your hearty and cheesy casserole with minced meat and potatoes!
